With summer long gone, we’ve pretty much harvested all of our veggies. This year we got over 430lbs worth of produce. So many tomatoes, cucumbers, zucchini, peppers, fresh herbs carrots and even some celery. Sadly we weren’t successful at all with our corns. A few weeks ago Demo made use some of the tomatoes to make this delicious homemade chunky tomato sauce. He was sweet enough to share his recipe with us.
Homemade Chunky Tomato Sauce Recipe
A few months ago I was sent the Hamilton Beach® Professional Quiet Blender. I’m pretty sure Demo has used it more than I have! He loves being able to do a big batch of tomato sauce in a fraction of the time. All the parts of the blender are dishwasher safe which makes cleaning a breeze. The Professional Blender comes with a tamper that makes mixing thick ingredients super easy!
What you will need*:
- 5lbs of tomatoes
- One glove of garlic
- Two large zucchini
- 1/2 yellow onion
- One green bell pepper
- Six large white mushrooms
- 4 carrots
- 1 teaspoon of olive oil
- Sea salt for taste
- 1 teaspoon of dry oregano
- 1 teaspoon of dry basil
*Makes enough sauce for two large Mason jars.
Wash and cut all the ingredients.
Add the tomatoes, 1/2 of the garlic, and spices in the blender. Mix using the pulse option until smooth.
In a large pot, add olive oil and saute the remaining of the garlic.
Pour the tomato and all the veggies in the pot.
Add salt to taste to taste
Let it simmer for on low for 1-2 hours.
Let it cool before transferring into a large Masson jars.
What I really love about this recipe is all the extra veggies that Demo added in the sauce. Both of my kids loved this chunky tomato sauce recipe. We sometimes added meats such as chicken or ground beef to our sauce, but it’s also great as is.
