Did you cashews come from a fruit? No? I only found that out a couple of years ago. How? While listening to one of those super catchy yet annoying songs that my son used to watch on YouTube (Thanks fo that one, Tobuscus!) But enough about that! Cashews are not something that I grew up eating. It wasn’t until I met Demo that I finally started to appreciate this delicious treat. My two favorites are roasted and salted cashews! For today’s post, I’m sharing a super simple homemade spicy roasted cashews. This recipe is so good!
Spicy Roasted Cashews Recipe
Cashews are high in fat, rich in vitamin E, and a great source of minerals. They have this buttery, sweet, and salty taste that I just love! Today’s recipe is a simple way to give their already delicious taste a little kick.
I personally LOVE spicy food and thought it would be fun to roast some of the cashews that I bought on iHerb.
2 cups of Organic, Whole, Raw Cashews, Unsalted
Two tablespoons of lime juice
Three tablespoons of organic raw honey
Two tablespoons of smoked paprika
Two tablespoons of red pepper flakes
One teaspoon of olive oil
One teaspoon of pink salt
- Pre-heat the oven at 350F
- In a large bowl, add all the ingredients.
- Mix them well.
- Add the cashews into the mixture and toss them all until all the cashews are coated with the mixture,
- Line a baking sheet with parchment paper.
- Spread the coated cashews on the baking sheet.
- Bake for 10-15 minutes.
- Check on the cashews 10 minutes into baking to make sure they are not burning.
So good! You can keep the roasted cashews in a sealed jar for a few days (if they even last that long…my didn’t last a day lol) in the fridge.
I’m so happy with how these turned out. You can taste the honey and lime and the spiciness in each bite. I wish I had added more red pepper flakes, though.
