High Liner’s Pan-Sear Selects® Lemon Pepper Sole with Orzo Salad and Lemon-Herb Vinaigrette
1 package High Liner Pan-Sear Selects® Lemon Pepper Sole
For the Salad: can be made ahead and last 3-4 days in the fridge.
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup Kalamata olives, sliced
- 1/2 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
For the Lemon-Herb Vinaigrette (optionally, you can use store-bought)
– 1/4 cup extra-virgin olive oil
– 2 tablespoons fresh lemon juice
– 1 teaspoon Dijon mustard
– 1 clove garlic, minced
– 1 teaspoon honey or maple syrup (optional, for sweetness)
– 1 teaspoon dried oregano
– Salt and black pepper to taste
- Cook the Orzo: Boil a pot of salted water and cook the orzo according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Allow it to cool completely.
- Prepare the Veggies: In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, Kalamata olives, red onion, and feta cheese.
- Make the Lemon-Herb Vinaigrette: In a small bowl, whisk together the olive oil, fresh lemon juice, Dijon mustard, minced garlic, honey or maple syrup (if using), dried oregano, salt, and black pepper. Adjust the seasoning to your taste.
