I’ve made this recipe a few times, and it’s a crowd pleaser. I love making this when I have apples sitting on the counter and a block of brie left from Demo’s cheese stash. I swear he would hoard this stuff if he could. It’s an easy lunch idea that feels a bit more grown-up but is still simple enough for busy days at home.
Here’s how to make it:
Apple & Brie Grilled Cheese Recipe
Ingredients
- 2 slices of your favorite bread (sourdough, brioche, or French bread work great)
- ½ Cosmic Crisp apple, thinly sliced
- 3–4 oz Brie cheese, sliced
- 1 tbsp butter, softened


Instructions
- Preheat your pan
Heat a skillet or griddle over medium-low heat. - Assemble
Butter one side of each bread slice. Place one slice, butter side down, in the skillet. Add the brie and apple slices, then top with the second slice, butter side up. - Cook
Toast for 3–4 minutes per side until the bread is golden and the brie is melted. - Serve
Let it cool slightly, slice, and enjoy.



Optional: A drizzle of honey or a bit of Dijon mustard adds extra depth if you’re in the mood. And if you’re feeling extra fancy, add some prosciutto for an extra touch of yumminess.
